Fermentation initiated with a pied-de-cuve of the same grapes using indigenous yeasts. Partial whole-cluster, 1 to 2 months maceration. Aged 12 months in unlined cement tanks and ceramic barrels. No wood used in the cellar. Small amount of sulfur added at bottling. Bottled unfined and unfiltered.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003eThe Superiore is the more structured and age-worthy of the two Valpolicella Classico wines at Il Sasso, distinguished from the Classico by its longer maceration (1 to 2 months versus shorter for the Classico), extended aging in cement, and the Superiore DOC designation which requires a minimum of one year aging and higher minimum alcohol than the basic Classico.
