Guyot-trained vines up to 25 years old, 6,000–7,000 vines per hectare. Yield 45–50 hl\/hectare. Hand-harvested mid-September. Sauvignon Blanc at these elevations in the Alto Adige sits in a register distinct from both the Loire and the New World, with cooler nights, volcanic and limestone tension, and an aromatic profile that runs toward elderflower and gooseberry rather than tropical fruit.
