Nose and palate of citrus, white fruits, and white flowers, with minerality, bright acidity, and a savory salinity. 

100% Melon de Bourgogne. Sourced from Domaine de la Grenaudière, Muscadet Sèvre et Maine, founded 1723. Organically farmed.

Granite terroir in the Pays Nantais, Loire Valley. Six months aging on lees prior to dealcoholization, consistent with Muscadet sur lie production standards.

Produced as a standard Muscadet sur lie first: native yeast fermentation, six months on lees in stainless steel. Alcohol subsequently removed by vacuum distillation, the gentler of the two primary dealcoholization methods, which operates at low temperature to preserve aromatic compounds. No artificial aromas added. 1.4 to 1.8 g/100ml residual sugar. Contains rectified concentrated grape must (moût concentré rectifié), used to stabilize the product post-dealcoholization. This is a standard addition in dealcoholized wines and does not affect flavor perceptibly.

Phénomène is the first dealcoholized wine produced from Melon de Bourgogne, launched at Wine Paris 2023 after two years of development by Olivier Cottenceau at Domaine de la Grenaudière. The lees aging that precedes dealcoholization contributes texture and a saline, mineral character that survives the alcohol removal process more intact than is typical for the category.

The domaine has farmed in the Pays Nantais since 1723, making Phénomène one of the few non-alcoholic wines backed by a genuine historic winemaking estate rather than a purpose-built brand. A sparkling version, Bulles de Phénomène, is also produced.
