In character though it is entirely a Wachau wine. Steep, terraced slopes of gneiss-based primary rock with some loess, at 280–350m above sea level, overlooking the Danube near the town of Stein. Because the Pfaffenberg lies outside the Wachau's classification system, Knoll uses the traditional German Kabinett\/Selection framework: Selection designates wines made from grapes left on the vine longer, comparable to a Smaragd in ripeness and structure. Fermentation with a combination of cultured and native yeasts over 10–20 days at 23–26°C in large old oak foudres, which are used exclusively across the cellar. The estate was established in 1825 and has bottled its own wines since the 1950s; the iconic label — a baroque depiction of Saint Urban, patron saint of winemakers, taken from a painting in the family's 400-year-old restaurant — has appeared on every bottle since 1962. Knoll is a founding member of the Vinea Wachau Nobilis Districtus and is widely considered the region's benchmark producer, with holdings across its most celebrated sites: Kellerberg, Loibenberg, Schütt, and Pfaffenberg.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eThe Pfaffenberg is a fascinating anomaly. By all geological and stylistic logic, it belongs in the Wachau — steep Urgestein terraces, gneiss and schist subsoil, proximity to the Danube — but when the Vinea Wachau drew its borders, Knoll's growers in the Wachau were wary of the influential merchant presence in nearby Krems, and sites like Pfaffenberg ended up on the Kremstal side of the line. No matter: the wine speaks for itself. Knoll's philosophy is to stay out of the way, using old oak foudres exclusively, never filtering, and releasing wines only when they're ready.
