On the palate, pronounced herbal bitterness meets gentle sweetness from honey and alpine botanicals, creating layers of complexity with flavors of roots, herbs, citrus peel, and warming spices that unfold gradually. The finish is long and refreshing with lingering bitterness, herbal notes, and a cooling menthol quality that cleanses and invigorates the palate.

Herbs, roots, and barks from the Monti Sibillini, including gentian, cinchona (Cinchona calisaya), artemisia, and anise, sweetened with local mountain honey.

Botanicals are hand-ground with mortar and pestle, then cooked in a wood-fire decoction, a technique unchanged since 1868, then blended with pure grain alcohol and Sibillini mountain honey. Aged and decanted over several months until clear, smooth, and stable. Unfiltered. No artificial coloring.

Distilleria Varnelli was founded in 1868 by Girolamo Varnelli, a herbalist working in Pievebovigliana, a small village in the Macerata province of the Marche, in the shadow of the Monti Sibillini. The distillery holds UTIF license number one — the first spirits production license issued in the region — and has remained in family hands ever since. Sibilla was the original product, and the recipe has not changed: a wood-fire decoction of wild mountain botanicals, sweetened with local honey, aged until the bitterness finds its balance. In the 19th century it was prescribed as an anti-malarial tonic, owing to its high concentration of cinchona bark. It won first prize in Rome in 1902. Today it produces roughly 5,000 bottles per year.

Named for the legendary prophetess said to dwell in the caves of the Sibillini, the amaro has the character of its landscape: rugged, elemental, and not particularly interested in making friends quickly. If your reference point is Averna or Montenegro, prepare to recalibrate. This is the drier, more herbaceous, more tannic end of the spectrum — a serious digestivo that rewards patience and a small glass.

//cdn.shopify.com/s/files/1/0754/3206/7378/files/Untitled-9_09658f49-e366-44bd-9303-eef00d727def.webp?v=1774484432
