A dry Vermouth with a Chardonnay base. Separate macerations of botanicals (Wormwood [artemisia vallesiaca; artemisia pontica]; sweet orange; genepy; mushroom; seaweed; ginger; fennel; rosemary; sage) in neutral grain spirit and water, and in wine. Macerating Porcini mushrooms with kombu seaweed has resulted in a unique, full-bodied, and convincingly dry “umami” Vermouth. Aging in steel tanks followed by light filtration and bottling. Some natural sedimentation is common across varieties. No added flavors, no extracts, no colorants, no clarifying agents and no preservatives.

Too long a “modifier” used to balance cocktails, Vermouth has found a new voice and purpose at Baldoria. The team here has transformed the narrative of this historic spirit with recipes that bring the grandeur of the Alps to your glass! The botanicals for their blends not grown in-house are foraged wild in the foothills of the Alps, part of a larger effort with local groups to protect these mountain habitats and encourage landscape conservation.

Ernest Spirits founders Daniel Schmidt and Dotan Shalev connected with Master Distillers Piero Nuvolini and Enrico Giordana and set out on a journey “to bring vermouth into the 21st century.” They planted wormwood and other botanicals, went searching for good wine, and began to tinker. They tinkered, tasted, then tinkered and tasted some more, until they had an amazing product. Baldoria was born!

The Italian name Baldoria, which effectively translates to “conviviality,” highlights vermouth’s grassroots history, and respect for the creativity and dedication of the native artisan producers. Baldoria is giving Vermouth a purpose and place on the shelf in its own right as a “stand-alone” spirit, as well as a cocktail and culinary ingredient for the bar, restaurant, home chef, and weekend bartender.

Produced in Boves, in the Piedmontese province of Cuneo, Baldoria is crafted with the best wines Piedmont has to offer. The botanicals are grown in-house on a 10-acre plot of land adjacent to the distillery as naturally as possible, without the use of pesticides or herbicides. Botanicals not grown in-house are foraged in the foothills of the Alps, a collaboration between the Baldoria team and the local alpine community, in an effort to promote the protection of local nature and further landscape conservation.
