Light bodied and delicate on the palate, with aromas of white flower & green fruits. A fresh nose of tropical fruit and delicate citrus, and a touch of vanilla. Finishes with well balanced acidity & smooth creaminess. Pair with delicate whitefish, raw oysters with mignonette, or freshly sliced melon or strawberries.

Named for the Catskill Mountains, the source of Brooklyn Kura’s exceptional water, this is their take on the pinnacle of sake making, a extremely polished Junmai Dai Ginjo. The nuanced flavors and delicate textures are difficult for even highly experienced brewers to achieve, this example is bursting with flavors of fresh fruit, a uniquely American take on the most expressive of sake styles.

"This is our second Dai Ginjo (our first was in collaboration with Nanbu Bijin--a 6th generation brewery). Dai Ginjo is considered a super premium style of sake due to the effort, time, and cost that goes into its production. We used 100% sake brewers rice (yamada nishiki), a single modern yeast, and didn't let the fermentation go above 11 degrees celsius. The result is intended to be delicate and luxurious."
