Vineous, spiced, and leesy, hinting at richness on the nose. Fresh, energetic, textural, and long.

"In the fall of 2022, we budded over a small section of the Manley Vineyard to a field blend of Pinot Blanc, Gris, Meunier and Noir. Our aim is to eventually find the genetic material for Petit Meslier and Arbane. The Manley vineyard would then have all 7 Champenoise varietals planted on this site, hence the name, 1+1=7, the math doesn't math..... yet.

"On August the 13th 2024, we got our first crop from the vineyard, picking all components at once. The grapes were lightly pressed, oxidatively handled, and fermented in a single 60-gallon barrel before undergoing malolactic fermentation. In the spring of 2025, the wine was hand-bottled and achieved 5.2 atmospheres of pressure without fining or filtration before being left to age in bottle for an additional 18 months. The wine was then hand-riddled and disgorged without the addition of sulfur or dosage.
