"Located in Sonoma Carneros just a stone’s throw away from downtown Sonoma, Manley Vineyard sits on a mix of Sandy Loam and clay soils. Since 2019, the site has been organically hand-farmed by myself.

"The Fruit was hand-picked on August the 15th, 2022. Grapes were then gently pressed (this bottling is 80 gallons per ton), oxidatively handled, and fermented with native yeasts in large-format French oak barrels. Malo-lactic fermentation was inhibited. The wine was assembled and hand bottled in February of 2021 under 6 atmospheres of pressure without fining or filtration. After 24 months on lees, the bottles were hand riddled and disgorged with no sulphur or dosage."

"The idea of BXT (which by the way stands for “Bubbles x Tom”) is to take a grower-Champagne mentality and apply it to top-quality, hand-crafted sparkling wines made in California. Tom seeks out interesting vineyard sites, makes very small batches of wines including oak aging base wines, hand-riddling, disgorging, and writing on every single bottle."
