Mid-to-deep ruby. Very youthful on the nose, like the wine was just racked off from the cask. Very distinctive. Cranberry and savoury spice with hints of tamarind and garden herbs. Racy acidity that works like a shot of energy. Wired raspberry and completely dry. Stunning, fine, gravelly tannins. Leggerezza!" – Walter Speller, 18/20, JancisRobinson.com

Aromas of wild rose, forest berry, tobacco, and leather. The palate shows ripe raspberry, Morello cherry, baking spice, and menthol. Structured and elegant with depth characteristic of the Bricco Boschis MGA. Drinking window 2028-2040.

Cavallotto has farmed the Bricco Boschis hill continuously since 1928, when Gildo Cavallotto purchased the estate. The 15-hectare monopole, one of the largest single-owner vineyard sites in Barolo, sits on Tortonian-era soils of compacted Helvetian sand and Lequio formation, which the family credits for the wine’s structural backbone. The estate is certified organic. Indigenous yeast fermentation, long maceration, and extended aging in large Slavonian oak. Bottled in February 2024.

In the Langhe landscape, there are names that immediately evoke tradition, rigor, and an unconditional love for the land. One of these is undoubtedly the Cavallotto winery. Located in Castiglione Falletto, this historic family-run winery has managed to carve out a unique path in the world of Piedmontese wine.

The history of the Cavallotto family as independent producers began in 1948, but it was in the 1970s that the winery carried out a true cultural revolution. At a time when industrial chemistry and intensive mechanization dominated Italian agriculture, brothers Olivio and Gildo Cavallotto chose to go against the grain, eliminating chemical herbicides and reintroducing natural vineyard management.

This early ecological sensitivity allowed the estate to preserve the extraordinary biodiversity of the soil of the famous Bricco Boschis, a family-owned monopole cru known for its sun-kissed hills and soils rich in clay-limestone marl. Today, the company carries on this legacy with rigorous organic certification, demonstrating that it is possible to produce monumental wines while respecting the balance of nature.

While organic farming is practiced in the vineyard, the watchword in the winery is "patience". Cavallotto is a proud interpreter of the strictly traditional style of the Langhe. Fermentations are spontaneous, started only by indigenous yeasts, and take place with long macerations in contact with the skins.

The wines undergo no sterile filtration or invasive fining that could diminish the living substance of the liquid. This reduces the presence of allergens and allows preservatives to be kept at infinitesimal levels, a radical choice. The use of large Slavonian oak casks ensures slow oxygenation, delivering noble tannins without ever masking the natural aromatic profile of Nebbiolo with the toasted aromas typical of industrial barriques. – albiocorini.com
