Lifted, crystalline nose of lemon zest, white peach, and chalk dust. The palate is brisk and finely etched, combining citrus pith, green pear, and a deep mineral core that reflects the cool, chalk-rich terroir of this tiny Grand Cru. Subtle cream, almond, and pastry crumb notes add finesse without softening the wine’s tension. The finish is long, saline, elegant, and stony.

Based in Mardeuil, working just 3.5Ha of vines, without pesticide or herbicides, Aurore was a ballerina before returning to the family domaine, working with her husband Jean-Baptiste Robinet from Avize. Spontaneous fermentations, no filtering or fining, wines of lightness and poise.

This is a blend of 2018/19/20, planted in 1986. Left in 228 and 400l barrels for a year. 

Clay and loam soils, on hard limestone present at around 80 cm, eastern exposure.

Alternative methods practiced on this plot, certified Organic, in accordance with the biodynamic calendar, with respect for people and the environment. Full hand harvest.

Traditional direct pressing on stainless steel troughs, spontaneous natural fermentation, aging on lees without racking in barrels for at least 11 months. The perpetual reserve was initiated in 2017 according to the same vinification principles, it has been enhanced every year since. Aging in bottle. No fining or filtration. Blend of wines from 3 harvests to which is added the perpetual reserve of Chardonnays from the plot.

Gold in color, a discreet wine at first glance whose breadth and complexity are revealed on the palate, leaving a saline finish of sea spray on the lips.
