Fragrant, crushed red cherry, violet, and subtle game notes on the nose over a chalky, mineral base. Silky and restrained on the palate, with bright acidity, fine-grained tannins, and a stony mineral finish.

100% Pinot Noir from a south-facing, 0.95 hectare parcel planted in 1979 on white clay soils.

Côtes d'Auxerre, northern Burgundy, west of Chablis. White clay soils on a south-facing slope. No herbicides or insecticides. Farming practiced organically, not certified.

3-day cold pre-fermentation maceration. 3-week ambient yeast fermentation in stainless steel tank with twice-daily pump-overs and up to 4 punch-downs. Aged 22 months in used oak barrels. Lightly fined with bentonite. SO2 added before bottling. Unfiltered.

After nearly a decade working at wineries around the world, including Chapoutier, Armand Heitz, and Chateau Margaux, Clément Lavallée returned home to the northern reaches of Burgundy in 2018. Fast forward to present, and he’s producing nearly a dozen different wines from organic vineyards in and around Chablis. 

Clément Lavallée works organically and therefore uses no chemicals or insecticides in the vineyard. Only native yeast and no sulfur are used during the vinification process. Lavallée moves the must by gravity and not by pumping. His plots are small, about five hectares in total. He is part of a new generation of winemakers who are exploring the enormous (biological) potential that still lies undiscovered in Burgundy.
