Cosimo expresses a complex range of sensorial impressions. Fruits like plum and blackberries are joined by fragrances of roses, dried petals, and pot-pourri. Then the spicy notes emerge, followed by a slight hint of tobacco. On the palate, its austere outset bursts into fruit pulp, and the enveloping tannins lead to a complex, perfectly balanced and lingering finale.

Northeast exposure; cordon spur training; 3000 plants per hectare, with the soil based with calcareous clay and filled with fossils from the Plio-Pleistocene area.

Cosimo comes from a parcel of vines that are over 70 years old, with multiple local varieties planted intermixed in each row throughout. This biodiversity, from the vine to the bottle, is the key to understanding this complex wine.

Our Cosimo wine had a very interesting harvest! With a vineyard full of different grapes, we harvest all grape varieties at once. Observing the Sangiovese grapes, which account for about 70% of the vineyard, we wait until their phenolic maturation which guarantees a higher structure and longevity of the wine. The complexity is further enriched by the various stages of maturation of the other local varities.

Cosimo represents an important example of how our territory is able to be expressed with finesse and elegance.

Vinification occurs in small open 10Hl containers, with manual punch down of the cap occurring multiple times a day to extract all the characteristic aromas of these varieties. Cosimo is the result of a completely natural vinification.

The fermentation, which occurs on the skins, lasts about 20-30 days with the naturally present yeasts. As always, the fermentation is carried out without selected yeasts or any chemical additives, with the small exception of a minimum of sulfites where necessary prior to bottling. The malolactic fermentation is completely spontaneous, and takes place in oak barriques. There, the wine will mature for about 12-18 months until bottling, where it will undergo continued refining.

Cosimo Maria Masini lies in the hills of San Minato, located in the province of Pisa and in the heart of Tuscany. An ancient medieval village found along the historical Via Francigena, San Miniato is famous for wine and world-renowned white truffle. In this area, viticulture has ancient origins with a history of more than 2000 years. Our winery extends for 40 hectares (100 acres) on a single hill cultivated with vines, olive orchards and other crops. Villa la Selva, the heart of the estate, is an ancient residence that belonged to the Buonaparte Family. It was later purchased by Marchese Cosimo Ridolfi, a famous agronomist of the time, who, during the mid 1800’s constructed the winery (which is still used today) and began to work the vineyards with innovative techniques of the time.
