Light and elegant with typical white pepper spice and fresh strawberry and raspberry fruit.
100% Pineau d'Aunis, certified organic and biodynamic, hand-harvested from vines grown in clay-silt soil. The grapes under whole-cluster maceration over the course of two weeks before pressing into barrel where both alocoholic and malolactic fermentations spontaneously take place (ambient yeasts, no temp. control). After 3 months in barrel, the wine is once-racked and bottled shortly thereafter. Unfined, unfiltered, no additional SO2.
Since the seventeenth century, located in the village of Thouarce in Anjou, the Vaillant family has passed on farmland from generations to generations. For the last ten years, sister and brothers have cultivated the estate using the biodynamic principles. The goal is to express the personality of each wines.
55ha of vines of Chenin Blanc, Cabernet Franc, Grolleau, and Pineau d’Aunis are planted. The diversity of their cuvees is due to the different type of soils and exposure found: schist sandstone, quartz, gravel, and clay. Almost all of their wines are made with no addition of SO2, and are neither filtered nor fined.
'Our sensitivity to the environment brings very interesting results in the quality of wines and also at the human level. It is indeed a great pleasure to feel in harmony with nature, however much attention is needed both in the vineyard and in the cellar. Biodynamics allows a global approach to the plant and the environment depending on the influences coming from the earth, air and water. The goal is for the vine to flourish in the best environment which will make it less susceptible to pests and will limit the application of copper and sulfur. As a priority, we try to develop the microbial life of the soil, as well as, the roots to draw out all of the useful elements. We favor the development of many grasses, wildflowers, and weeds (annual and perennial) which provide ecosystem-friendly biodiversity. We are also attentive to the rhythm of the planets and adapt certain tasks, especially working the soil, in order to take advantage of the favorable influences. The vine becomes more resistant and some applications of herbal teas, small doses of copper and sulfur allow us to obtain beautiful harvests. In the cellar, we intervene very little with the wines. There is no exogenous input and as little transfer as possible. All of our wines are without sulfur or fining agents and are not filtered with the exception of wines with residual sugars.' – winemaker's notes
