Fresh, clean, and crunchy, with small red fruits and peony florals on the nose, and a bright, juicy palate with good aromatic complexity.

60% Syrah, 40% Carignan. Gobelet-trained vines, 20 to 80 years old on schist, sandstone, and limestone soils at altitude in Faugères. Certified AB organic and Demeter biodynamic. Hand-harvested.

Syrah whole-cluster fermented (grains entiers) for red fruit and floral character. Carignan given short maceration for freshness and crunch. Free-run Carignan juice added for structure. Lees aging in stainless steel throughout; gentle methods preserve lees quality without crushing the pips, adding texture and length. No fining, no filtration. 

The Sur le Zinc is everyday drinking wine inspired by the style of Beaujolais rather than the extracted, powerful reds more typical of Faugères. The name references the old Parisian bistro tradition of drinking a quick glass of wine at the zinc (tin) bar top before heading off.

Domaine Les Serrals was founded in 2016 by Chloé Barthet and Frédéric Almazor, neither from winemaking families, who left Paris and settled on 6.4 hectares in a single block on the heights of Faugères after finding a plot of land that suited their vision. All vines are gobelet-trained on schist soils. They built their own cellar underground in the schist to maintain constant year-round temperature. AB organic certified from the start, Demeter biodynamic certification also held.
