El Pintor Blanco is a truly work of art. With the amount of cooked agave notes on display, it's simply one of a kind. We start our process by selecting only ripe blue agaves from a single plot in the Lowlands, near the Volcán de Tequila. Our cooking process takes place in a traditional brick oven. We then grind the agave in two parts: one part goes to our traditional tahona and the other to a mechanical mill. Afterwards we ferment the cooked juice with the fibers. To finish, we make a double distillation in stainless steel pots with  a copper coil. It's finished at 84 proof, ideal for cocktail making and agave aficionados.
