Aromas of citrus peel, red apple, red berries, and dried herbs with a distinct mineral edge. The palate is structured and energetic, with bright acidity, light tannic grip from skin contact, and a savory, slightly saline character. The finish is long, clean, and mineral-driven.

From 45 year old vines on limestone and sandstone. 5 day maceration on the skins, then a soft pressing into neutral barrel and into steel tank with 25% of the skins. It matures for 10 months on the lees and skins before a super-light filtration and a tiny amount of sulfur at bottling. While this is markedly darker than the other wines in the lineup, this is solely from the pigment in the skins – it doesn’t see significant extra maceration time.

The Grauburgunder by Enderle & Moll is a pure Pinot Grigio macerated on the skins, distinguished by its characteristic coppery hue and dynamic personality. The artisanal winery Enderle & Moll is located in the Baden wine region of southwestern Germany, where since 2007 it has been producing wines of high craftsmanship and clearly defined style. A core value of the production philosophy of Sven Enderle and Florian Moll—friends who run the estate—is to allow the territory maximum freedom of expression, without invasive manipulation or artifice. “Grauburgunder” is simply the German name for Pinot Grigio.

Enderle & Moll Grauburgunder is made exclusively from Pinot Grigio grapes grown according to biodynamic principles on limestone soils rich in marine fossils. After hand harvesting, the bunches are placed in stoneware (gres) vats for spontaneous alcoholic fermentation, with 4–5 days of skin contact between the must and the grape skins. After pressing, fermentation continues and the wine then ages in the same stoneware vats for 10 months, during which 40% of the skins are left to infuse. Throughout the entire process, the wine is neither fined nor filtered.

In the glass, Enderle & Moll Grauburgunder shows a bright orange color with copper highlights. The nose reveals fresh, layered notes of citrus, red fruits, and balsamic herbs, complemented by elegant mineral nuances. On the palate it is striking for its structure, agility, and vibrancy, with a taut, fresh, savory streak leading into a long, mineral-driven finish. A skin-macerated Pinot Grigio that successfully combines depth and lift, making it an excellent match for a hearty traditional dish from the Baden region: käsespätzle, small dumplings dressed with abundant cheese and fried onions.
