Super fresh with crisp orchard fruit, excellent minerality, and length.

100% biodynamically farmed (demeter certified) Chardonnay. Focus on soil health, low yields, physiologic ripeness and overall balance in the vineyard (and in the resulting wines). Natural yeast fermentation in tank. Aged in a combination of tank and demi-muids (600L barrels). Little to no fining or filtration.

"This white Burgundy from Guilhem and Jean-Hugues Goisot is a fantastic showcase of chiseled style of Chardonnay from Auxerre, akin to a great village-level Chablis. In reality, it often outperforms wines from neighboring Chablis, especially at this price-point. Their organic and biodynamic vines are now a staple of the region with four generations working the land by hand. The vines for this Chardonnay are 15 to 20 years old, and the wine is fermented and raised in stainless steel tanks, and bottled carefully to retain as much of the purity and precision as possible. This delicious Côtes d'Auxerre is a great value for a complex, intriguing, and mineral-driven Chardonnay."
