Rich, fruity, and spicy on the nose with bright notes of red fruits and dried cherry. On the palate, undulating layers of cherry and bitter cherry pit, including punchy floral-acidic Marasca and darkly colored sweet-and-sour Amarena. Vibrant and medium-bodied, gaining complexity over time in bottle.
Corvina, Corvinone, and Rondinella. Certified organic.
Grown on south-facing hilly terraces in Montricco di Negrar, 300 metres above sea level. Valpolicella Classico zone, northwest of Verona. Calcarenite gialla (yellow limestone) soils just centimetres below the surface. Wild native species replanted among the vines, green manure treatments throughout.
Hand-harvested, partial whole-cluster. Fermentation initiated with a pied-de-cuve of the same grapes using indigenous yeasts. Partial whole-cluster, 1 to 2 months maceration. Aged 12 months in unlined cement tanks and ceramic barrels. No wood used in the cellar. Small amount of sulfur added at bottling. Bottled unfined and unfiltered.
The Superiore is the more structured and age-worthy of the two Valpolicella Classico wines at Il Sasso, distinguished from the Classico by its longer maceration (1 to 2 months versus shorter for the Classico), extended aging in cement, and the Superiore DOC designation which requires a minimum of one year aging and higher minimum alcohol than the basic Classico. Both wines are made without wood, preserving what Bellamoli describes as the brightness and elegance of the tannins that the calcarenite limestone terraces contribute.
