Chenin Blanc from a sustainably grown vineyard in the Clarksburg AVA of the Sacramento River Delta. This Chenin was harvested in early October and steel fermented.

Pet Nat is the oldest sparkling wine method, predating champagne. Yeast is trapped in bottle converting the remaining sugar into alcohol. As the fermentation continues the byproduct, CO2, becomes trapped in the bottle, becoming the bubbles you enjoy in your glass.
