52% Merlot, 25% Cabernet Sauvignon, 22% Aboriou.
Hand harvested and whole cluster fermented with native yeasts in old barrels. Both the Merlot and Abouriou are left to co-ferment and age in old oak barrels for 8 months. The Cabernet Sauvignon goes through carbonic fermentation, and ages in oak barrels for 8 months, then blended in bottle. No fining, filtering, or additional sulfites added.
Antoine Bernardin, in his early thirties, is at the head of La Petite Odyssée estate, located in Lavernose-Lacasse, south of Toulouse in south-west France. Antoine grew up in the vineyards: his father is a winegrower himself. It was natural for him to study viticulture and oenology through a license then a Master in Oenology. With passport in hand, he began his wine adventure, working for biodynamic estates all over the world: Burn Cottage in New Zealand, Trinité Estate in California, Islander Estate in Australia. When he returned to France, he supervised Domaine Achillée’s vinifications in Alsace. In 2019 he took over 4 ha in the South-West, which he converted to organic and biodynamic, followed by 4 additional hectares in 2020, forming his current Estate.
