This tequila is a blend of modern and traditional production methods, with 70% of the agave processed by roller mill and 30% crushed by a tahona. The juice is then fermented separately in both stainless steel and open-air wooden tanks with agave fibers, before being double-distilled and bottled at a robust 46% ABV (92 proof), offering a full-bodied and authentic expression. This unique, intermittent cooking method—where agaves are cooked for 8 hours a day over four days—allows for deep, layered flavor development.
Lágrimas del Valle, or "Tears of the Valley," is a vintage, single-estate tequila that masterfully captures the unique terroir of Guanajuato. This high-elevation ranch, located in La Romita, is surrounded by mountains and yields agave with a distinctive character. Produced in collaboration with the Rosales family of Tequila Cascahuín, this additive-free tequila is a testament to traditional craftsmanship and a celebration of the rich complexity of the blue Weber agave.
