A fruity rum with slight notes of vanilla and banana flambé with a honey length. A subtle marriage between freshness and unctuosity which will enhance all your cocktails.
ORIGINS
A meticulous selection is made of distillates from 3 distinct terroirs in the Caribbean Islands of Barbados, Trinidad and Jamaica.
The intention of the Master Blender is to showcase the typicity of these terroirs in a perfect balance while highlighting the differences of each region.
DISTILLATION
The Chosen unaged rums are selected from both traditional refinement methods, as the ultimate goal is a blend that has the richness and intensity from the distillation of molasses in pot still combined with the delicacy and lightness from sugarcane distillation in columns.
BLENDING
These rums now voyages across the ocean to France to be blended by Cognac Master Jerome Tessendier. His intent is to create a unique harmony using the same methods as for cognac, blending the different island terroirs with their diverse floral, fruity and spicy aromatic profiles.
FINISHING
The blend rests in mature French oak barrels on the banks of the Charente River for 3 months.
This last step gives a hint of roundness and smoothness to this fresh, fruity and floral blend.
The rum is then gradually reduced to 40%; no sugar is added.
The Cellar Master created his rum in four key stages from search for terroirs to the finishing touches: origins, aging, blending and finishing.
Each of these stages follows the previous one, like the four seasons. This innovative, sequenced approach produces the rum known as Saison.
The house of Tessendier has been distilling eaux-de-vie for over 130 years using Charentais stills in the traditional Cognac methods which develop distinctive flavours and aromas. The family works closely with Cognac-based coopers to select the grain and toasting level of the French oak barrels used to mature their cognacs to perfection. This careful attention to detail enhances the nuanced, elegant aroma profiles of their spirits.
The profession of Cellar Master, today shared by brothers Jérôme and Lilian Tessendier, is a true vocation and a veritable passion. They now apply their expertise in blending and ageing techniques to a different world of spirits: rum.
The brothers draw from their experience and clear vision of the spirits world. They begin by tasting, analysing, and evaluating rums from various sources to create a blend in accordance with the traditional French method. This elaboration will enhance the authenticity, finesse and subtlety of the spirit.
