Varietal: 95% Sangiovese, 5% Falanghina
Bursting with vibrant red fruit, floral aromatics, and lively acidity. The nose is wild strawberry, tart cherry, and pomegranate, followed by a refreshing palate with hints of rose petals, blood orange, and a touch of white pepper. Carbonic maceration enhances the silky texture and juicy freshness, making for an easy-drinking, chillable red with a playful, energetic finish.
The Sangiovese comes from Stiletto Family Vineyard, nestled in the heart of San Benito County, and is a testament to organic viticulture with a forward-thinking mindset. Developed by Ron Siletto in the late 80's, the vineyard is one of the most exciting groups of vineyards in San Benito county due to its rich, diverse range of obscure Italian and French Varietals. The vineyard thrives on well-drained, gravelly soils and benefits from the cool breezes flowing through the nearby Gabilan Mountains, creating ideal conditions for growing a diverse range of grape varietals. Family-owned and operated, Siletto is known for its commitment to organic farming practices, fostering healthy vines that produce fruit of exceptional quality under CCOF certification. The Falanghina comes from organically farmed Lost Slough Ranch in Clarksburg. The cool breezes that flow from the Sacramento River Delta, combined with the rich sandy, clay loam soils, create an optimal environment.
After the hand-harvested Sangiovese was put in a vat we added falanghina juice that had been pressed to the fermentation before sealing it up for a full carbonic fermentation. Native yeast, and native malolactic bacteria fermentations. This wine was racked off malolactic lees and aged for 5 months in neutral barrels. Unfined and unfiltered.
