Cultivated in loess, clay, and sandy soils, the grapes undergo a special process. After harvest, they are crushed and experience skin contact for several hours, followed by gentle pressing and fermentation in stainless steel tanks. The fermenting juice is then bottled with the precise amount of residual sugar for the final fermentation, where natural yeasts work their magic, converting the sugar into alcohol and carbon dioxide. This Pet Nat undergoes a single disgorgement after completing fermentation in the bottle.

We are making still and sparkling wines in the Eastern Austrian region called Weinviertel. In years past, we tried to gain as much experience and knowledge as possible outside of Weinviertel, outside of Austria, always at wineries that are fully committed to organic farming. Back home, we are trying to build a place where tradition meets technology, where old meets new, hand in hand, with no compromise on nature or taste.
